Pumpkin Protein Mug Cake

It is officially pumpkin spice season and this is one of my favorites. A high-protein mug cake that is so delicious, the perfect quick fall dessert.

Ingredients

  • 1 scoop Level-1 Pumpkin Spice Latte protein
  • 50g Pumpkin Kodiak pancake mix
  • 1/2 cup milk
  • 1/4 tsp maple extract (optional)
  • Pinch of sea salt
  • 1 tbsp almond butter (optional, for topping)
  • 1 tbsp pure maple syrup (optional, for topping)

Directions

  1. In a microwave-safe mug, mix the protein powder, Kodiak pancake mix, milk, maple extract, and sea salt until you have a smooth batter with no dry spots.
  2. Microwave for 45 seconds, until set but still moist. Add time in short bursts if needed.
  3. Top with the almond butter and maple syrup, and enjoy warm.
