3-Ingredient Salsa Chicken

This is the one I made on repeat when my kids were little. Three ingredients, a slow cooker, and you walk away from it. It shreds into tacos, bowls, or a salad, so one batch covers most of the week. The macros below are for the chicken by itself, before whatever you put on top.

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 packet taco seasoning
  • 1 jar salsa (16 oz)
  • Optional toppings: shredded cheese, avocado, lime, cilantro, pico de gallo, extra salsa
  • To serve: tortillas, taco shells, tortilla chips, rice, or a bed of greens

Directions

  1. Place the chicken in the slow cooker in an even layer.
  2. Sprinkle the taco seasoning evenly over the top.
  3. Pour the salsa over everything, making sure all of the chicken is coated.
  4. Cover and cook on low for 6 hours, until the chicken shreds easily with a fork.
  5. Shred the chicken directly in the slow cooker using two forks.
  6. Let it rest in the sauce for 10 to 15 minutes before serving so it soaks the sauce back up.
  7. Serve over rice, in tortillas or taco shells, over tortilla chips, or on a salad, with whatever toppings you like.

Tip: One batch covers tacos one night and bowls or a salad the next. It also freezes well in portions.
