Lemon Blueberry Protein Pancakes

Our go-to weekend pancakes lately. Easy, full of flavor, and something the whole family gets excited about. I add Level-1 Blueberry Muffin for extra protein, for me and the kiddos too.

Ingredients

  • 1 1/2 cups buttermilk pancake mix (I usually use Kodiak Cakes)
  • 1 scoop Level-1 Blueberry Muffin protein
  • 1/2 cup fresh blueberries
  • 1 tbsp fresh lemon juice plus zest (or 1/4 tsp lemon extract)
  • Water or milk, added to batter consistency

Directions

  1. In a large bowl, mix all ingredients until you have a smooth, pourable batter, folding the blueberries in last. Add water or milk gradually to reach your desired consistency.
  2. Heat a nonstick skillet or griddle over medium heat and lightly grease it.
  3. Pour the batter onto the skillet in individual pancake-size spoonfuls.
  4. Cook until bubbles form on the surface, then flip once and cook until golden and fluffy.
  5. Serve warm, topped with extra blueberries if you like.
