Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • 3 to 4 cloves fresh garlic, minced
  • Juice of 1 whole lemon
  • 1/2 cup chicken stock
  • 2 to 3 tbsp fresh parsley, chopped

Directions

  1. Pat the chicken dry and season both sides with the salt, pepper, garlic powder, chili powder, and oregano.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Place the chicken smooth-side down and sear for 4 to 5 minutes, until golden brown. Flip and cook for another 3 to 4 minutes.
  4. Add the minced garlic and cook for about 30 seconds, stirring frequently so it does not burn.
  5. Pour in the fresh lemon juice and chicken stock, scraping up the browned bits from the bottom of the pan to create a flavorful sauce.
  6. Continue cooking on the stovetop, or transfer the skillet to a 375F oven, until the chicken reaches an internal temperature of 165F.
  7. Let the chicken rest for 5 minutes before slicing. Spoon the lemon garlic sauce over the top, then add fresh parsley before serving.

Tip: Serve with roasted potatoes, rice, or your favorite vegetables for a simple, balanced meal.
