Lemon Garlic Chicken Thighs

Juicy, flavorful chicken thighs seared until golden, then finished in a bright lemon garlic sauce. This is a simple weeknight dinner that is high in protein and pairs perfectly with roasted vegetables, potatoes, or rice.

Ingredients
- 2 lbs boneless, skinless chicken thighs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp dried oregano
- 1 tbsp olive oil
- 3 to 4 cloves fresh garlic, minced
- Juice of 1 whole lemon
- 1/2 cup chicken stock
- 2 to 3 tbsp fresh parsley, chopped
Directions
- Pat the chicken dry and season both sides with the salt, pepper, garlic powder, chili powder, and oregano.
- Heat the olive oil in a large skillet over medium-high heat.
- Place the chicken smooth-side down and sear for 4 to 5 minutes, until golden brown. Flip and cook for another 3 to 4 minutes.
- Add the minced garlic and cook for about 30 seconds, stirring frequently so it does not burn.
- Pour in the fresh lemon juice and chicken stock, scraping up the browned bits from the bottom of the pan to create a flavorful sauce.
- Continue cooking on the stovetop, or transfer the skillet to a 375F oven, until the chicken reaches an internal temperature of 165F.
- Let the chicken rest for 5 minutes before slicing. Spoon the lemon garlic sauce over the top, then add fresh parsley before serving.
Tip: Serve with roasted potatoes, rice, or your favorite vegetables for a simple, balanced meal.
